We want to share this super easy recipe for asparagus, which are in the markets now, and will be in the Greenmarket sometime in the next month. This has become our go-to, gotta-eat-something-green dish.

Oven-Roasted Asparagus with Pistachio Nuts and Pomegranate Seeds

Serves 4

Ingredients:

2 lbs of asparagus (usually this is 2 bunches)
2 tbs olive oil
4 tbs roasted or raw pistachio nuts – optional
4 tbs pomegranate seeds – optional
2 scallions, finely chopped (both the white and the green part)
2 tbs balsamic vinegar
Salt and pepper to taste

Preparation:

Preheat the oven to 400 degrees
Trim the tough lower part of the asparagus so only the tender spears remain
Place asparagus on a baking sheet in a single layer
Drizzle with 2 tbs of olive oil
Sprinkle with salt and pepper

Roast in the oven for 20 minutes till tender and crispy. You don’t have to turn them, just let them roast.
Slide the asparagus onto a serving platter and sprinkle with roasted or raw pistachios, pomegranate seeds, scallions, and balsamic vinegar.
Serve hot.

Note:
You can use left over pistachio nuts and pomegranate seeds for couscous another day
