GIANT GINGER COOKIES
(Makes 12)
Ingredients
2 cups all purpose flour
½ cup spelt flour
2 ¼ teaspoons baking soda
½ teaspoon salt
1 tablespoon ground ginger
½ teaspoon allspice
¼ teaspoon ground black pepper
1 ½ sticks unsalted butter
¼ cup light brown sugar
¼ cup dark brown sugar
½ cup granulated sugar
6 tablespoons molasses
1 large egg
Procedure
1.
In a medium bowl whisk together flours, baking soda, salt, ginger,
allspice and pepper.
2.
In an electric mixer, cream butter and sugars until light and fluffy,
add in egg, molasses and vinegar. On low
speed, or by hand, fold in flour mixture. Chill dough 15 minutes.
3. Divide dough into 12 equal
pieces and roll into balls and dredge in sugar.
4.
Bake at 350 degrees for 12-15 minutes.
