ASIAN DUMPLING SOUP
(Makes 8 servings)
Ingredients for dumplings
1 ½ pounds ground pork
1 small onion
2 garlic cloves
½ teaspoon salt
¼ teaspoon pepper
½ cup soy sauce
1 package wonton wrappers – round
Ingredients for broth
6 scallions sliced very thin
8 garlic cloves
¼ cup peeled and thinly sliced
ginger
5 cups of water
3 cans chicken broth (14.5 ounces
each)
Procedure for filling
1. Saute
onions and garlic.
2. Add
in pork and cook for 8-10 minutes or until pork is thoroughly cooked.
3.Add salt and pepper and then cool the
mixture
Procedure to assemble dumplings
1. Lay
out wonton wrappers and in center of each add ½ teaspoon filling.
2. With
fingertip wet all around edges and fold over to make a crescent or ½ moon
shape.
Procedure for broth
1. In
large saucepan bring all ingredients for broth to a boil.
2. Lower
heat and simmer partially covered for 10 minutes.
3. Add
chicken broth.
